Apple Pudding Recipe
This is a recipe for a favourite teatime pudding. Many of the recipes on this site are traditional dating back many years, with the original creator lost in the mists of time. Apples give this dish a tart sweetness which warms the winter months
Irish Apple Pudding
- 4 cooking apples (peeled, cored, sliced)
- 2 heaped tablespoons apricot jam
- 4 oz sugar
- 1/2 lb flour
- 1/4 teaspoon baking powder
- 4 oz shredded suet
- 2 oz butter
- pinch of salt
- grated rind and juice of one lemon
In a bowl, sift the flour,, baking powder and salt together. Mix gently and rub in the suet and then add some water. This should be sufficient to make a firm dough. Roll this out and use approx. 2/3 to line a pudding bowl. Keep the remainder for the "lid". Cook the apples along with the lemon rind, juice, butter, sugar and jam until all the apples are soft (but not "mush"). Allow to cool then spoon into pastry lined pudding bowl. Cover with the remaining pastry ensuring that you wet the edges to seal.
Cover with buttered greasproof paper and seal with kitchen foil. Place in a steamer or larger pot with boiling water for 1&1/2 to 2 hours topping up with water when necessary. Using gloves or a thick napkin remove from pan and serve directly from bowl. Accompany the dish with custard or cream
