Autumn Pudding Recipe
This is a recipe for a favourite teatime pudding. Using soft fruits it would traditionally be made in the Autumn when the fruits were at their best. As with many of the recipes on this site, this is a traditional recipe dating back many years, with the original creator lost in the mists of time. The soft fruits give this dish a tart sweetness which is particularly nice in the Autumn months
Autumn Pudding Pudding
- 8-9 slices of stale Wholemeal bread
- 675 g (1&1/2 lb) mixed soft fruits e.g. raspberries, blackcurrants, blackberries, cherries etc.
- 4 x 15 ml spoons (4 tbsps) honey
Line the base of a 850ml (1/2 pint) pudding basin with 1-2 slices of bread. Line sides of dish with more bread so that the bread fits closely together. Hull and wash the fruit and place in a pan with the honey. Cook for 2-3 minutes until the juices begin to run. Spoon the fruit and juice into the basin and cover the surface closely with the remaining bread.
Put a plate over the top of the pudding and weigh it down with a heavy tin or jar. Leave in refrigerator to chill for 8 hours. Turn basin onto serving plate to unmould the pudding.
