Baked Tomato Soup

This dish is easy to prepare and commonly prepared soup throughout the world. Different variations fo it exist and this recipe is based on one from Greece. Can be garnished with parsley.

Recipe Ingredients:

  • Tomatoes - 2 kg
  • Olive Oil - 4 tbsp
  • Olive Oil - 4 tbsp
  • Thyme - 2 tbsp
  • Sugar - 1 tbsp
  • Pepper - 2 tbsp
  • Salt to taste
  • Chicken broth - 2 Cups
  • Onion - 1
  • Garlic - 2 tbsp




Method:

Chop the tomatoes as medium pieces and add these pieces to a baking pan. Add Olive Oil and pinch of sugar, basil and thyme to the tomatoes. Add pepper and salt and bake this mixture at 180 degrees for 35 min. Take a pan and put olive oil to the pan. Add Onions and garlic and fry for 3 min.

Add the Stock and baked tomatoes to the onion mixture. Boil it on medium heat for 30 min. Take the mixture out once boiled into a deep bowl. With the help of a blender mash the soup and the soup is ready to serve. Can garnish with parsley and pepper if required.
