Bamboo Green Chicken Curry

This is a Thai curry dish which uses chicken as the main ingredient. Traditionally served with a little rice it can also use pitta breads to accompany it.

Recipe Ingredients:

  • Bamboo Shoots - 1 pound
  • Chicken fillets - 1 pound
  • Coconut milk - 1/2 litre
  • Green Curyr Paste - 2 tbsp
  • Fish Sauce - 4 tbsp
  • Sugar - 3 tbsp
  • pepper - 2 tbsp




Method:

In a pan add coconut milk and boil the milk. After 5 min add curry paste and mix well. Cook for 10 min. add the bamboo shoots (washed and drained), sugar, fish sauce, coconut milk, pepper and cook for 15 mins. Slice the chicken then add to the pan and cook until the chicken becomes soft and is well cooked.
