Beef & Mixed Vegetables

This is a traditonal Turkish dish which would be served as a main dish with rice on the side. The flavoursome ingredients like eggplant, olive oil, potatoes add more taste to the recipe.

Recipe Ingredients:

  • Eggplant Cut into Pieces - 1
  • Potatoes - 4
  • small zucchini in chunks - 1
  • Finely Chopeed/ Sliced Onion - 1
  • Garlic Cloves - 3
  • Green Onions finely Sliced - 3
  • Cubanelle Pepper - 1
  • Tomato paste - 1/2 cup
  • Olive oil - 1/4 cup
  • ground Beef - 1 cup
  • Salt & Black pepper to taste




Method:

In a deep bowl add water and salt and mix well. Add the washed eggplants to it and soak for 1 hour. Squeeze the egg plants and remove the water from them. In a deep pan add onions, salt & pepper , potatoes. On low heat cook for 15 mins. Add the beef and cook for another ½ hour. Add the other remaining items and egg plants and cook for 15 mins. Serve it hot.
