The site concentrates on British recipes from Scotland, England and Wales with a few recipes from Ireland, India and France "thrown in". Primarily designed to provide ethnic recipes and meals, whether you are looking for an unusual meal, a straightforward meat, fish or poultry meal dish or even a sweet pudding recipe then hopefully you will find it here.

You can search for any recipe using a variety of ways including region, country, base ingredient or "pot luck" all from the drop down menu at the top of each page.

Brandy Wafers Recipe

This is a recipe for brandy wafers. When making these bear in mind that it is NOT an alcoholic drink. The brandy is for flavouring only! Traditionally they would have been served with whipped cream as a filling or even ice cream. Rarely served on their own but that isn't to say they can't be.

Recipe Ingredients:

2 oz Golden syrup
2 oz Butter
1/2 ts Ground ginger
2 oz Caster sugar
1/2 teaspoon Brandy
2 oz Flour

Method: Pre heat oven to 450F. Grease baking trays then melt the butter, syrup and sugar together in a saucepan over a very gentle heat. Stir in the flour, ground ginger and the brandy. Mix well together and beat for about 5 minutes.

Drop small teaspoonsful on to the baking sheet, spaced well apart (they should spread quite thinly). Bake for 5 minutes until pale golden brown in colour then, while still hot, roll around the greased handle of a large wooden spoon (this should give them a tubular look). Set aside to cool.

As with all recipes which involve cooking and baking a sensible approach must be taken especially when dealing with warm or hot (temperature) ingredients. If you are unable to take due care, please do not attempt to make any of these recipes. All recipes are tried at your own risk.
