Citrus Surprise Pudding Recipe

This is a recipe for a light Summer pudding. A relatively modern recipe it uses ingredients which would be imported from aroudn the globe such as grapefruit and oranges.The recipe can be adapted to suit experimentation with other flavourings.

Ingredients:

  • Grated rind and juice of 1 grapefruit
  • Grated rind and juice of 1 orange
  • 50g (2oz)margarine
  • 125g (4oz) caster sugar
  • 2 eggs, separated
  • 50g (2oz) selfraising flour
  • 150ml ( pint) milk



Method:

Add 1/2 grapefruit & orange rind to the margarine and sugar and cream together until well softened. Add the egg yolks and beat well. Stir in the flour, alternately with the milk, orange and grapefruit juice. Whisk the egg whites until stiff and fold in. Pour the mixture into a greased 850ml (1& 1/2 pint) ovenproof dish and bake in preheated oven l80~C, 350~F, Gas No.4 for 40-45 minutes or until golden brown.
