The site concentrates on British recipes from Scotland, England and Wales with a few recipes from Ireland, India and France "thrown in". Primarily designed to provide ethnic recipes and meals, whether you are looking for an unusual meal, a straightforward meat, fish or poultry meal dish or even a sweet pudding recipe then hopefully you will find it here.

You can search for any recipe using a variety of ways including region, country, base ingredient or "pot luck" all from the drop down menu at the top of each page.

Traditional Irish Cod and Cockles Recipe

This is a very traditional Irish Fish dish which uses cod (or even codlings) and cockles, although again, these are sometimes replaced by mussels.

24 cockles
8 medium potatoes (peeled and quartered)
8 (very) small onions, peeled
4 cod fillets
1 oz melted butter
Seasoning (Salt & Black Pepper)
4 sprigs thyme

Wash and scrub the cockles well discarding any which are open (unless you want food poisoning!!) Place in a saucepan with just enough (slightly salted) water to cover and bring to the boil, shaking the pan periodically.

Cook until all the cockles have opened. If for any reason some do not open then discard-potential of food poisoning. Strain the cockles once they are cool enough to handle, keeping the liquid. Remove the cockles from their shells.

Parboil the potatoes and onions and drain well. Pre heat the oven to 400F . In a well buttered casserole dish, place the cod fillets and top each with the thyme.Place the potatoes and onions around the cod fillets, then spoon the cockles over the top. Pour the liquid from the cooking of the cockles over all the ingredients. Finally, pour the melted butter over the top of the ingredients

Cover the dish with a sheet of greaseproof paper to avoid burning and then cover that with a sheet of baking tinfoil. Bake for 30-35 minutes, until the cod fillets and tender and cooked through. Remove the sprig of thyme then serve with a potato dish of your choice.
