Danish Cucumber Salad

easy to make, this Danish cucumber salad gives a slight twist on a traditional recipe.

Recipe Ingredients:

  • Cucumbers - 4
  • White Vinegar - 2 Cups
  • Salt
  • Water - 1/2 Cup
  • Sugar
  • White Pepper - 1/2 tbsp
  • Fresh Dill Leaf - 2 tbsp
  • Tomatoes Small - to garnish




Method:

Wash the cucumbers and cut into thin slices. Take an aluminum foil and add the cucumbers as a layer and add salt on top of the layer. Close the foil and place a heavy plate as a weight on the foil. Keep in fridge for 6 hours. Whilst the salt should have absorbed most of the the liquid, squeeze cucumber slices to remove any excess. Take a frying pan add sugar, salt, pepper, cucumbers, vinegar and on low heat boil until the sugar is melted. Mix this mixture to the cucumbers. Keep it in fridge and cool it for 4-5 hours. Take the cucumbers out and it is ready to serve. Can be garnished with tomatoes.
