Fig Pudding Recipe

This is a recipe for a very rich and fruity sponge pudding. It mixes the rich flavours of brandy or rum with plenty of fruits to make it into a hearty warming dish.

Fig Pudding

Ingredients:
8oz dried figs
2oz raisins
3oz butter
3oz soft brown sugar
3oz plain flour
2oz fresh white breadcrumbs
1oz ground almonds
pinch of mixed spice
1 egg
grated rind of 1/2 a lemon
1 to 3 tablespoons (according to taste) of brandy OR rum OR sherry


Method:
Soak the figs overnight in cold weak tea (some people add a little lemon juice). Before starting to make the pudding, drain the fruit well and chop the figs finely. In a bowl mix (cream) the butter and sugar together then fold in the flour gradually.

In a separate bowl beat the egg with the brandy and alcoholic spirit of your choice. Again mix well. Then pour into a 2 pint, well buttered, pudding bowl and cover with a greaseproof sheet then seal with kitchen foil. Cover and steam for 3&1/2 to 4 hours.

Serve, whilst still warm, with custard or cream.
