Traditional Scottish Game Casserole Recipe

Game can be used in a variety of ways in this recipe. In fact almost any kind of game can be used to make this rich stew and this is the kind of recipe that a cook can "tweak" to her/his own requirments.

Grouse casserole

Ingredients:
6 oz grouse meat
6oz venison
6oz hare (or rabbit)
2 oz diced ham(bacon)
2 oz chopped onions
1oz chopped carrots
2oz chopped celery
3/4 pint game stock
3fl oz red wine
1 oz seasoned flour
Seasoning (Salt & Pepper)




Method:
Cube the meat into 1-1&1/2 inch cubes. Toss all the meat in the seasoned flour. Melt the butter in a heavy-bottomed casserole dish and fry the vegetables until soft. Then add the meat and ham and fry until browned.

Then, add the stock and red wine. Bring up the heat, cover and simmer gently for 1-1&1/2 hours skimming the fat from the top occasionally.
Will serve four to six along with a potato dish of your choice.
