Scallop Pie Recipe

This is an Ulster (Northern Ireland) dish which would have been served from the scallop shells rather than in a pastry or pie crust.

Ingredients
4 prepared scallops
3/4 pint milk
1 lb haddock (or other suitable "light" white fish)
1 small onion
Seasoning (Salt & Black Pepper)
1 & 1/2 pounds potatoes
2 oz butter
3 oz mushrooms (finely sliced)
1 oz plain flour
3 tablespoons single cream
1 tablespoon dry sherry




Method
If necessary, remove and discard the tough white ‘muscle’ from each scallop. Separate the red corals from the scallops, then cut the white part into fairly thick slices. Place these slices into a pan with the haddock, onion, herbs and pepper along with 1/2 pint of milk. Bring this mixture to the boil then simmer gently for 15 minutes. Add the corals and simmer for a further 5 minutes. At the same time boil the potatoes.

Remove herbs and drain well keeping the liquid. By now your potatoes should have boiled and softened and you should mash them with the remaining 1/4 pint of milk, 1 oz of the butter and some seasoning. Fry the mushrooms in a pan using the rest of the butter. Add the flour and the liquid kept from before. Bring to the boil and simmer until thickened. Add the cream, sherry and fish mixture and mix well. Season as necessary

Pre heat the oven to 350F then divide the mixture between the scallop (washed) shells.Top with mashed potato, dot with some butter and cook until the potato is golden brown.
