Irish Soda Bread Recipe

Soda bread can be found across many parts of the British Isles but perhaps its most famous version is that originating in Ireland. Irish soda Bread was traditionally baked on a griddle over a peat fire, you will be glad to hear that a simple oven will do the job just as well.

Ingredients
1 lb wholemeal flour
8oz white flour
1 teaspoon salt
1 teaspoon bicarbonate of soda
1 oz rolled oats
½ pint buttermilk (do NOT use normal milk)

Method Pre heat the oven to 425F. In a bowl mix the flours, salt, bicarbonate of soda and rolled oats. Stir in enough buttermilk to make a soft dough. Turn the mixture out on to a lightly floured surface and knead GENTLY then shape into a round loaf (almost bread roll shaped). Place this on a buttered baking sheet, glaze if desired (beaten egg or milk) and using a sharp knife "slash" the top of the dough with a cross shape. Bake the bread for 20-25 minutes. Serve warm cut into slices with butter.

As with all recipes which involve cooking and baking a sensible approach must be taken especially when dealing with warm or hot (temperature) ingredients. If you are unable to take due care, please do not attempt to make any of these recipes. All recipes are tried at your own risk.
