Lamb Cobbler

This is a simple Irish version of "perogies" or small pies made with lamb or mutton, vegetables and beans. Irish Lamb Cobbler is delicious and can be served at special occassions.

Recipe Ingredients:

  • 1/2 kg lamb, chopped
  • 1 onion
  • 1 carrot
  • 1 can red kidney beans
  • 1 cup lamb stock or 1 cube of vegetable stock
  • 1 tsp pepper
  • Salt to taste
  • 250 g wheat flour
  • 3 tbsp baking powder
  • 25g butter
  • Mixed dried herbs
  • 1 cup milk




Method:

In a deep pan boil simmer the lamb along with onions, carrots and kidney beans for 1 hour, adding stock if needed.

Drain the liquid, add pepper and salt. On low heat cook for another 20 mins, so that lamb becomes soft and flaky.

In a small bowl mix the baking powder, butter and flour. Add the herbs and mix with milk. Make the dough.

Take small portion of the dough, roll it flat and add the pan mix to each portion. Pinch the edges together.

Bake in the hot oven for 10 minutes until cobblers turn golden brown. Serve with sour cream.
