Parkin cake Recipe

This is a recipe for Parkin. Parkin is a rather filling ginger cake made with oatmeal and treacle. Its unusual name is said to originate in the term for a cold winters night "parky" but I suspect that is nonsensical foklore. It is however, traditionally eaten on Bonfire Night which is in November

Parkin Pudding

Ingredients:

  • 125 g (4 oz) margarine
  • 125g (4 oz) golden syrup
  • 125 g (4 oz) black treacle
  • 125 g (4 oz) caster sugar
  • 1 egg, beaten
  • 150 ml (1/4 pint) milk
  • 225g (8 oz) medium oatmeal
  • 225 g (8 oz) plain flour, sieved with
  • 4 x 5 ml spoons (4 tsps) ground ginger and
  • 2 x 5 ml spoons (2 tsps) ground cinnamon and
  • 1 x 5ml spoon (1 tsp) bicarbonate of soda
  • 50 g (2 oz) stem ginger, drained, chopped




Method:

Melt the margarine, add syrup, treacle and sugar and cook over a low heat until sugar begins to dissolve. (Do not allow mixture to boil). Add remaining ingredients and mix well. Pour into a greased and bottom-lined 20 cm (8 inch) square cake tin and bake in centre of pre-heated oven 160°C, 325°F, Gas No. 3 for 1&1/2 - 2 hours. Allow to cool a little before removing from tin.
