Pot Chicken Roast

A simple spicy, low fat chicken pot pie with white-meat chicken, mixed vegetables, and lemon zesty flavour.

Recipe Ingredients:

• 4 lb chicken
• 2 tbsp bacon drippings
• Salt to taste
• 2 tbsp black pepper
• Grated lemon rind
• 1 cup diced onion -
• 1 garlic clove
• 1/2 cup dairy sour cream
• 5 oz cooked noodles
• 2 cooked potatoes

Method:

In a pan fry chicken cubes till golden brown. Add salt, pepper, lemon juice, chopped onions, and chopped garlic. Top with sour cream and mix well.

Simmer for 2 hours until the meat is cooked properly.

Add noodles and mashed potatoes. Cover with a lid and cook for another 15-20 min. Serve hot.
