Autumn Pudding Recipe

This is a recipe for Pumpkin Pie which is a well known American dish but is also popular throughout the world. Made with the autumn fruits it contains apples and dried fruit also.

Pumpkin Pie Pudding

Ingredients:
1lb ripe pumpkin (finely diced )
1/2 lb apples (finely diced)
1/2 lb currants
1/2lb sultanas
4oz brown sugar
Lemon Juice
3/4lb shortcrust pastry
ground ginger (half to one teaspoon)
1 teaspoon mixed spice


Method:
Pre heat the oven to 400F. Mix all the ingredients together in a bowl (except the pastry). Put all the mixed ingredients into a large pie dish approx. 9inches in diameter. Roll out the pastry and cover the pumpkin mixture. Trim the pastry and decorate if required.

Brush the top with egg white to encourage browning and sprinkle with sugar. Place in the oven for 20 minutes, then reduce temperature to 350F. Bake for a further 20 minutes (or until pastry is brown)
