Rice with Green Peas

A rice recipe from Lebanon featuring rice with chicken and peas and tossed with a wegetables and spices.

Recipe Ingredients:

  • 1/2 kg chicken cut into cubes
  • 1/2 kg green peas
  • 150 g carrots
  • 100 g crushed tomatoes
  • 5 tbsp tomato puree
  • 1/2 cup chopped onion
  • 3 cloves of garlic, crushed
  • 2 tbsp ground coriander
  • 1/2 cup fresh coriander, chopped
  • 1/4 tbsp 7-spices
  • a pinch of chilli powder
  • 3 cups chicken stock
  • 2 tbsp oil
  • 2 tbsp lemon juice
  • salt & pepper to taste




Method:

Fry the onions in oil till they become golden and add some garlic, coriander, chilli, spices. Stir well and add chicken.

Fry for 15 minutes and add tomatoes, tomato puree, lemon juice and chicken stock.

Simmer in low heat for 20 minutes, add carrots, green peas, coriander, salt, and pepper and continue to simmer for another 15 minutes or till chicken is cooked.

Garnish with coriander and chopped pepper.

Serve hot with rice or pita bread.
