Sfiha - Meat Pies

Sfiha, or meat pies, are a popular Shamy appetizer. These small pies are topped with minced meat.
For US to UK equivalents see this rough guide

Recipe Ingredients:

  • 1/2 flat bread
  • 1 tbsp olive oil
  • 1 pound of fresh lamb
  • 1 medium onion chopped fine
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon white pepper
  • Salt to taste
  • 1/2 cup chopped tomatoes
  • 2 tablespoons fresh lemon juice
  • Vegetable oil for cooking

Method:

Fry the lamb on medium heat. Fry until the lamb is cooked properly. Add chopped onions and cook until the onions are soft. Add pine nuts and mix well. Cook for another 2-3 min.

Add finely chopped tomatoes and fry for 15 min. Cover with a lid.

Add the lemon juice and cook until the tomatoes and the meat is cooked well.

Prepare the koubiz dough according to package instructions. Take a small dough and spread it. Add the meat mix as a filling. Roll the dough so that the mix is in the middles like a roll.

Deep fry these rolls in hot oil or bake them on a greased pan for 20 min at 300C till golden brown.

Serve hot along with lemon wedges and tahini sauce.

As with all recipes which involve cooking and baking a sensible approach must be taken especially when dealing with warm or hot (temperature) ingredients. If you are unable to take due care, please do not attempt to make any of these recipes. All recipes are tried at your own risk.
