Barbecued spare ribs is a very simple recipe and one which all budding barbecue chefs like to "cut their teeth on".

Barbecued spare ribs

Ingredients Barbecue Sauce:

  • 15 g (1/2 oz) margarine (or butter)
  • 1 x 5ml spoon (1 tsp) sesame oil
  • 1/2 medium onion, peeled and finely chopped
  • 2 cloves garlic, crushed
  • 2.5 cm (1 inch) piece fresh root ginger, peeled and finely grated
  • 1 x 5 ml spoon (1 tsp) ground coriander
  • 5 x 15 ml spoons (5 tbsps) hoisin sauce
  • 2 x 15 ml spoons (2 tbsps) soy sauce
  • 2 x 15 ml spoons (2 tbsps) clear honey
  • 2 x 15 ml spoons (2 tbsps) sherry
and of course you also need 450 g (l lb) pork spare ribs


Method:

Melt margarine (or butter) together with sesame oil and saute onion, garlic and ginger until soft. Stir in coriander to cook for a further 2 minutes. Remove from heat and add remaining sauce ingredients and mix well together. Add spare ribs. Allow 10-15 minutes to "marinade"

Place spare ribs on a grill pan and cook under a moderate heat for 15-20 minutes until tender, turning frequently and brushing with remaining sauce. Alternatively cook on a barbecue, again until tender and cooked through, brushing with remaining sauce. Serve hot with rice or on their own.
