Spekkoek

A good spicy Spekkoek, Danish cake adopted by Indonesian, will have at least 12 layers or more. Spekkoek will keep moist and fresh in a cake tin or in the fridge for a week, well wrapped in a wax paper.

Recipe Ingredients:

  • 250 g butter
  • 250 g sugar
  • 8 large eggs
  • Salt to taste
  • 150 g flour
  • 2 tbsp icing sugar
  • 2 tbsp cinnamon
  • 1 tbsp ginger
  • 1/2 tbsp nutmeg
  • 1/2 tbsp cardamon powder
  • 1/2 tbsp cloves powder




Method:

In a bowl combine butter and sugar and make a cream paste.

In another bowl beat well the eggs. Add salt and flour to the egg mixture. Add the butter and sugar creamy paste to the egg mix.

Divide the mix in to equal parts. Add spices.

Take a baking cake pan and butter the dish. Add the spiced batter to the pan and form a thin layer.

Bake till the top of the cake becomes light brown in colour. Add dry fruits, cherries to the cake.

Let the cake cool and can garnish with sugar.
