Stuffed Peppers with Lentils

Recipe with peppers which is stuffed with spices . This is a very tasty one to have.This recipe which is below is for 5 servings

Recipe Ingredients:

  • 2/3 cup red lentils
  • 1 inch piece ginger
  • 4 tbsp vegetable oil
  • 1 tbsp ground coriander
  • 4 medium green bell peppers
  • 1/4 cup water
  • 1 tbsp cumin seeds
  • Salt to taste
  • 1 tbsp pepper
  • 3 tbsp chopped onions
  • 2 green chillies




Method:

In a bowl soak the washed lentils for 2 hours.

In a pan cook the peppers for 5-7 min till they are soft. Take them out.

Add some more oil and add the cumin. Add the onions and chillies. Fry till the onions are golden brown.

Add the ginger and fry for 2-3 min. Add the chopped coriander.

Drain the water out from lentils using a sieve. Add lentils to the pan, mix well and sprinkle salt and pepper to taste.

Add more water to the pan and cook till the water is absorbed.

Use this as a stuffing for the fried peppers. Stuff the peppers well and bake them in oven at low heat.

Serve hot with sour cream sauce.
