Trout and bacon Recipe

This relativley simple dish combines two easy to obtain wholesome ingredients, namely trout and bacon. Traditionally, this dish used to be baked in an open fire with the fish encased in mud. Hopefully we hav emoved on since then.

Trout and Bacon

Ingredients:
1 Rainbow Trout per person
Fresh rosemary & Fresh thyme
Parsley
Fresh sage
Rasher of bacon for each person
1 knob of butter


Method:
Clean the Fresh rainbow trout but leave the head and tail on. Stuff each piece with a mixture of fresh rosemary, thyme, parsley, and sage which should be loosely chopped and blended with a little butter. Wrap the fish in a long rasher of bacon then place in foil and bake in a hot oven for around 25-30 minutes.

Once cooked through, open top of foil and allow to settle for about one minute. Then brush with a little butter and serve.

Serve with crusty bread or Serve with boiled potatoes and plain fresh vegetables.
