Vegetarian Chow Mein

This is an easy recipe for vegetable chow mein with stir fried Chinese vegetables, egg noodles and seasonings, garnished with fresh bean sprouts. Chow Mein is a staple of Chinese cuisine!

Recipe Ingredients:

  • 1 cup assorted vegetables
  • 1 can bamboo shoots
  • 1 cup celery
  • 1 cup mushrooms, chopped
  • 1/4 kg Bok Choy (Chinese lettuce)
  • 1/4 kg dry noodles
  • 1/2 kg bean sprouts
  • 1 onion, sliced
  • 1 carrot, sliced
  • 1 green onion
  • 1 red pepper
  • 3 tbsp soy sauce
  • Salt to taste
  • 2 tbsp pepper
  • 1 tbsp corn starch
  • Water




Method:

In deep container boil the noodles and drain the water. Add some oil and keep the noodles aside.

In a pan combine brown sugar, soy sauce and red pepper. On low heat melt the sugar, add chopped onions, chopped garlic and ginger root, chopped carrot, chopped spring onions, chopped beans. Cook for 5 min.

Add the scallions (or green onions), snow peas and lime peel to the pan. Cook until the peas become tender and soft. Cook for 5 more min and add the bean sprouts.

Cook for 10 min until the beans are cooked properly. Add salt and pepper and mix well.

Add the noodles and fry for 10 more min. Garnish with coriander and serve.
