Welsh Gingerbread Recipe

Welsh gingerbread would be a typical tea time treat in Wales often served with a warm drink such as tea or coffee. The recipe which uses spices such as molasses (black treacle) to give it a rich dark texture and flavour.

Welsh Gingerbread

Ingredients:
3 lb. flour
7 ts ground ginger
6 oz black treacle (molasses)
1/4 pt milk
6 oz Demerara sugar
1/4 lb butter
2 oz minced peel
1/2 ts bicarbonate'soda
1 ts cream of tartar


Method: Sift the flour with the bicarbonate of soda and cream of tartar. Then mix the butter into the flour and add all the other dry ingredients. Finally mix in the treacle and milk. Mix the final paste(mixture) well.

Place in a well greased tin and bake in a low oven (300/F.) for 1 1/2 hours.

As with all recipes which involve cooking and baking a sensible approach must be taken especially when dealing with warm or hot (temperature) ingredients. If you are unable to take due care, please do not attempt to make any of these recipes. All recipes are tried at your own risk.
