This is a lebanese recipe which is made of wheat stuffed with spicy filling which is of lamb. This is very nice and delicious recipe as a main dish. It is best when served hot.
For US to UK equivalents see this rough guide

Recipe Ingredients:

  • 1 lb cracked wheat
  • 1 and 1/2 lb lamb
  • 1/2 tbsp black pepper
  • 1 and 1/2 tbsp salt
  • 1/2 onion chopped
  • Filling:
  • 1 lb lamb or beef
  • 1 large onion chopped
  • 2 tbsp pine nuts
  • 1/2 tbsp salt
  • 1/4 tbsp pepper
  • 2 tbsp minced parsley
  • 4 to 6 tbsp butter

Method:

In a large pot add water and soak the wheat for 8-10 hours overnight. Drain the water and add the lamb and mix with pepper, salt, and chopped onions. Mix well to make a fine paste. Form balls from the mix and make a core in the middle and which is closed on one side (i.e. not all the way through the ball).

In a pan add onions and fry them in butter till golden brown. Add the nuts and mix well. Add paste add this mixture to the balls as filling. Add oil to the deep pan and fry these balls until golden brown.

As with all recipes which involve cooking and baking a sensible approach must be taken especially when dealing with warm or hot (temperature) ingredients. If you are unable to take due care, please do not attempt to make any of these recipes. All recipes are tried at your own risk.
